MAGGI ASAM PEDAS- CHECK THIS OUT!!!

hola!

let appreciate a bit history of Asam Pedas. the origin of this dish is Malacca, south Malaysia. the taste of Asam Pedas are sweet, sour, salty and hot. it is just like Tom Yam, we have to balance the taste to the the real ummph!




INGREDIENTS

blend:
3 cloves garlic
2 no shallot
1 cm ginger
1 cm galangal
1 no red chili

1 tbsp blended dried chili

1 no lemon grass (pound)
2 no kafir lime leaves
50 ml tamarind juice
2 no tomatoes (wedges)
5 slices mackerel steaks

4 packets instant noodles



METHODS

1) saute blended ingredients until the color turn brown and a little bit dry.
2) add lemon grass, kafir lime leaves, tamarind juice and about one and half litter of plain water.
3) let it boil before put fish. let it boil again. season with salt and add tomatoes. done!
4) boil the instant noodles. enjoy!

SPECIAL COMBO! - Spaghetti Spicy Beef Bolognese & Iced Tea Lemonade

as a Malaysian, i really enjoy hot and spicy food. not only to test my adrenalin, but i think it is part of satisfaction when eating. even if i eat western food, i'll try to make it more Asian taste by using Asian ingredients, herbs and techniques of cooking.

instead of eating sour Bolognese, i more prefer if it taste a little bit hot. so lets find out the recipe. this recipe is for 4-5 pax.


INGREDIENTS
2 no shallots (small dice)
3 cloves garlic (chopped)
1 tsp crushed black pepper
1 tsp dried oregano
1 no dried bay leaf
7 no of bird eyes chili (mixed colours, sliced)
1 can (about 150 g) button mushroom (sliced)
1 can (about 400 ml) tomato puree
200 ml water
500 g minced meat
1 no yellow bell pepper (medium dice)
1 tsp of salt

400 g spaghetti
1 tsp oil
a pinch of salt

2 sliced cheddar cheese (option)


METHODS
1) saute shallot, garlic, black pepper, dried oregano, bird eyes chili and bay leaf on medium heat.
2) at the same time pan fry the minced meat on medium heat until three quarter cook.
3) add in button mushroom and saute for seconds.
4) pour tomato puree, stir and let it simmer before pour the water and let it simmer again.
5) put minced meat and bell pepper, stir and let it boil before season with salt.
6) boil the spaghetti until al dante. follow the instruction on the packet because different thickness of spaghetti will take different time.
7) during the water boiling, pour oil and salt before put the spaghetti and cook.
8) for garnishing, take half of sliced cheddar cheese and put on top of Bolognese sauce and put in the microwave oven for about 1 minute to melt the cheese.



to be honest, i don't really drink after meal. i'll wait like half an hour before i drink. usually i just take room temperature of plain water. but it is honour for me to share a simple recipe of a lemonade. this recipe is for 2-3 persons.

here's the deal...


INGREDIENTS
2 bags of tea
4 tsp sugar
125 ml hot water
1 can 7 up
1/2 no lemon (take the juice only)
1/2 no lemon (sliced)
some iced


METHODS
1) in a jug, put tea bags, sugar and pour hot water. stir until the sugar is dissolve.
2) remove the tea bags. pour 7 up and lemon juice.
3) put the sliced lemon and iced water.

CORNFLAKES COOKIES

one of my family and friends favourite cookies. i don't know who is the creator, but i took at from a 5 stars hotel in my city during my internship. i would say thanks a lot to the creator. this cookies such an awesome cookies with a great taste! so guys please try this recipe. i just baked the cookies last night and my mum finish about one quarter of them! 

INGREDIENTS
210 g butter
100 g brown sugar
80 g icing sugar
1 no egg (gred A)
1/2 tsp vanilla essence
400 g flour
1 tsp baking powder
250 g cornflakes


METHODS
1) mix butter, brown sugar and icing sugar, do not cream.
2) pour egg with vanilla essence
3) put sifted flour and baking powder.
4) put crushed cornflakes
5) take some dough and shape into small balls, pressed it with your fingers or fork. bake on 180 degree Celcius for about 15 minutes.



*if you want your product finer, do sift the icing sugar
* don't forget to put the baking paper on the baking tray to avoid from the cookies sticks to the tray. or you may thinly grease the tray with shortening.




HOMEMADE SPICY CHICKEN & MUSHROOM PRATHA PIZZA

hey there, as i have promised you on Twitter, Fb and Ig, i will publish my Homemade Spicy Chicken & Mushroom Pratha Pizza. it is super easy to do. you can do it just in minutes and the ingredients are very easy to get.

you can do it as your hi tea, dinner, supper or at your party. it is cool to have the home made pizza at your place than order at the pizza shop because you can have the real fresh from oven pizza on your lap!

okay, here the ingredients and methods.

INGREDIENTS
1 piece of frozen pratha
2 tsp tomato puree
1 slice cheddar cheese
25 g shreded mozzarella cheese
50 g sliced chicken (grill or boil but just half cooked)
2 no of button mushroom thinly sliced
some shallot rings
some slices of yellow bell pepper
1 no of red and green bird eyes chili thinly sliced
a pinch of salt
a pinch of dried oregano
a pinch of black pepper


METHODS
1) pan fry the pratha. 
2) spread the tomato puree on top of the pratha.
3) torn the cheddar cheese and sprinkle on the pratha.
4) put button mushroom then sliced chicken on the sprinkled cheddar cheese.
5) sprinkle the mozzarella cheese.
6) put shallot rings, bell pepper and chili on top.
7) finally sprinkle salt, oregano and black pepper as seasoning.
8) bake the pizza for about 3 minutes on 200 degree Celsius. use only top heat to melt and brown the cheeses.


****if you do not know what is pratha, it is frozen roti canai. but you can replace it with pizza bread, tortilla bread, or even naan bread.

* i really love some Asian touch such as a little bit of hot taste from bird eyes chili which is very suit to Malaysians taste.

My MUM's Steamed Fruits Cake

fruit cake is very common when celebrating Christmas, but it is not Christmas yet and i do not celebrate it. and usually you may find some Fruits Cake recipes where they pour some BRANDY or just be careful if you buy Fruit Cake at cake shop because maybe they use non halal ingredients. who knows right? so it is non halal and prohibited for Muslim.

so, i just want to share a very simple recipe yet it is the most delicious Fruits Cake i ever ate. this recipe was taken from my mum and i am not so sure where was the recipe came from.

so here we go..


INGREDIENTS A
10 lb butter
2 cups castor sugar
5 no eggs
600 g flour
2 tsp vanilla essence
2 tsp cream of tartar
2 tsp bicarbonate of soda
1 small box of mixed fruits (i don't really like it, so i just put some. its up to you how much you want to put)

INGREDIENT B
1 cup sugar


METHODS
- mix butter and sugar until fluffy.
- pour eggs and vanilla essence. mix well.
- sift all flours and mix with mixed fruits before add into the mixture.
- caramelized the sugar and carefully pour into the batter. at this time, you should mix them quickly before the caramelized sugar set.
- pour the batter into a light greased mould and steam it for 4 hours.
-when the cake is done, take it away from the stove and let it cold.


MY MUM'S TIPS
# flours must mixed with mixed fruits first before add into the mixture because if you just add them separately, the mixed fruits will sink at the bottom of the cake.
# 4 hours steaming the cake is very long time. so the water in the steamer will reduce, when you want to add more water, make sure you add HOT WATER so the temperature will not drop, hence your cake will 'drop' as well.


so......




i guess this recipe is very unique. no wonder my father really love it. even it takes quite long time to cook, but it is worth it! and for your information, the shelf life of this Fruits Cake is up to 1 month in dry storing.

The good days to die hard! (Chocolate Cake recipe inside!)


Last week I have returned home because my sister who studies in New Zealand was come back home. Alhamdulillah, I manage to go home safely.

I was so happy all the days I was at home because a lot of fantastic things done and happened. The major factor I came home was I just want to see my sister. It has been about more than one year we do not see face to face. I was so glad to see my sisters, nephews, nieces and specially my mum. During that time, the school break was not over yet so my sister, nephews and niece were at home.

I was so lucky because I could see them and they have paid a lot of things for me. What a generous sisters? As a typical human, I always want more and more. I love to shop even though I have a lot of clothes already. Thanks to my sweetie sisters who paid for me. I got hijabs, shoes, FIFA World Cup jerseys and some personal stuff like facial powder, face scrub, mask, etc.


i paid myself for this. i'm not Brazil's fan. i just bought this because if the material, but i do love to watch Neymar's skills.

the new shoes!

I was born in food lover’s family. Even we have a lot of food in our house, but we love to eat outside. It is also because of the craving of my ‘Kiwi’ sister. She wanted to eat Char Kuew Tiaw, Domino’s Pizza, Fettucini Carbonara (usually pizza and pastas offered in New Zealand have ham), Chim Chum (just like Seoul Garden), etc. we also went to our ‘favourite’ restaurant, Noodles Station. We are sort of frequent customers there, not because of the food, service or price, but it is because of the environment, the concept and the atmosphere. It is kind of casual dining, the customers will feel relax and cozy to have some chit chat with family and friends.

Not to forget, I also got some souvenirs from my sisters. From New Zealand I got Whitakers, Belgian and Lindt Chocolates, some fridge magnets, Victoria University t-shirt and printed Kiwi apron with kitchen towel. While from Turkey (my sister and her husband done Umrah in Mecca and Medina, they also visited Turkey), I got Istanbul printed t-shirt, keychain and fridge magnet. Thanks a lot, I do appreciate them.

As i was home, a lot of treasures i have found. Lets see.

this is my nephew and i almost forgot that he was this cute. as he was "rapidly" grows up!

days become years and the cute little boy turns to "giant" nephew (the right site).
this is me, when i was 4 or 5.

It is meaningless if I do not cook if I go home. I love to make pastries products even I am the one who eat it. I bake some cakes, Chocolate Cake with Chocolate Ganache, Butter Cake with Cream Cheese Frosting and Brownies with Chocolate Ganache, also a type of cookies, Chocolate Chips Cookies. I will share the recipe soon.

·         Here I am going to share you Chocolate Cake with Chocolate Ganache

Chocolate Cake

225g butter
300g sugar
5no eggs
½ tsp vanilla essence
200g flour
100g cocoa powder
1tsp baking soda
125ml milk (fresh/ low fat/ chocolate or even plain water)

    1) Beat butter and sugar until fluffy
    2) Pour eggs (one at one time, beat slowly until it dissolve      properly before you pour the others) with vanilla essence
    3) Add sieved flours, cocoa powder and baking soda carefully. Do not spill
    4) Pour in the liquid
    5) Bake/ steam for about 45 minutes at 180◦c


Chocolate Ganache

400g cooking chocolate
200ml heavy cream

   1) Bring the cream to simmer, off the flame
   2) Add chopped chocolate

Custard Bread Butter Pudding?

Or what should I call it? Its okay, never mind. I was created this recipe, inspired by a Bread Butter Pudding with Custard Sauce recipe which I found on the internet. However, I want to make Bread Butter Pudding but in different way.  

Let’s begin!


Ingredients A
  • 16 slices of white bread
  •  4 cups fresh milk





Tear the breads and soak in the milk.


Ingredients B
  • 8 tbsp sweetened milk
  • 4 tbsp butter
  • 5 no eggs
  • 2 tsp corn starch
  • 2 tbsp custard powder
  • Vanilla essence



Whisk the milk, eggs until well mix. Add the other ingredients.






Mix the mixture A and B. bake for about 45 minutes or until fully cooked and brown.
